The 2018 Aquinas Cabernet Sauvignon is vibrant in the glass with bright aromas of fresh mixed berry fruit, raspberry jam, red currant and toasted sweet oak notes. The mouthfeel is soft and lush and leads to a juicy and flavorful palate. This medium-plus bodied wine offers berry fruit character and crushed herb, pencil shavings and baking spice flavors. The wine is a cooler climate style; elegant with a rich texture and integrated, smooth tannins. With 12 months of aging in mostly American oak (30% new), the Cabernet Sauvignon is well-balanced with good acidity and a lingering, flavorful finish. This satisfying wine is pleasant to sip on its own but pairs well with a variety of foods including grilled ribeye steak or roasted leg of lamb.
The backbone of this wine comes from Cabernet Sauvignon grown on Pauli Ranch located in Mendocino county. This cooler climate region gives Cabernet Sauvignon fruit with depth, structure, dark fruit flavor and subtle, complex herb notes. In addition to Mendocino, perfectly ripened fruit from Napa Valley, Lake County, and Alexander Valley compliments the final blend. These additional North Coast appellations bring bright fruit flavors, lush round tannins and good structure throughout.
